Saint Elizabeth Opens Renovated Dining Room


With the start of the spring semester, the College of Saint Elizabeth in Morristown, N.J., dedicated its renovated Rose Dining Room. The renovations include a dining space with removable booths that seats 220 people, USB outlets, three television monitors, grab-and-go units, and automated window blinds. The dining hall’s hours have also been expanded for the students’ convenience.

A ribbon-cutting ceremony  officially opened the renovated space which was a $1.2 million capital investment that was finished on schedule and within budget, Jim Gerrish, the director of facilities, said. “We’re very happy with the design company HMC, Parkhurst, and that the whole project has come to fruition,” he added.

CSE’s recent 10-year contract with Parkhurst Dining includes their assistance with renovating the service and dining area. HMC, Inc. a millwork and design company, designed the dining hall’s space. The Leegis Group, Inc., was the general contractor, and BrightSign, a digital signage media player, will stream the information on the television monitors.

College of Saint Elizabeth  Names New Business Program Chair

Regina Riccioni, Ed.D., is the new chair for the Business and Health Administration programs at the College of Saint Elizabeth.

Dr. Riccioni, Clinton, N.J., has been working in academia for the past 11 years. Before joining the College, she was the Dean of Campus and Allied Sciences at Union County College in Plainfield, N.J. She received her doctorate in Educational Theory, Policy and Administration from Rutgers University in New Brunswick with her dissertation The Perception and Enactment of the Health Educator Role of Physician Assistants in Family/General Practice in New Jersey. Dr. Riccioni also holds an MPH in Environmental and Occupational Health and is a Certified Health Education Specialist.

“I am excited to be joining the College working with my new colleagues to continue to grow the business and health administration programs. I am particularly excited about teaching and working with students to help them achieve academic success.”

The Business Administration program offers a Bachelor of Science or a minor in Business Administration, a Continuing Studies Accounting Concentration, and a Combined BA or BS/MS in Management Degree. Students can take courses in-person, online, and hybrid formats. Qualified students, after successfully completing their junior year, may apply to the Combined Degree Program with the required degree. Graduate students may choose from one of two specializations: Human Resources Management or Organizational Change Management.

The Health Administration program curriculum offers three concentrations: Health Informatics, Health Project Management, or Health Communication. The Master of Science in Health Administration features an integrated program combining a core curriculum, an elective component, and an internship and capstone course.

Dr. Riccioni has raised more than $900,000 in the past eight years for health and academic programs including being a Co-PI on an NSF grant and working with a number of corporate funders to support academic initiatives at Rutgers University and Thomas Edison State University. Most recently, Dr. Riccioni received funding through the Student Success Innovation program at the NJ Council of County Colleges. For the past four years, Dr. Riccioni has been invited to present three times at The National Institute on the Assessment of Adult Learning conferences about college-level and workplace learning. She will finish her online Master’s in Business Administration in Gerontology and Health Economics from the University of Louisiana at Monroe in May.
